HOW TO COOK FIREWOOD/NIGERIAN PARTY JOLLOF RICE AT HOME USING GAS


Call me a foodie! Oh, yes I am a lover of good food.😎😎 And not just good food oh😅🙈 give me some firewood Party Jollof rice and I will be your BFF 😂 

What is a Nigerian party without jollof rice? Absolutely none oh😂Before you continue salivating or wonder why the long talk, let me share how you can easily cook this easy Nigerian firewood jollof rice at home!

First things first, see some tips below👇🏽 

Tips For Nigerian Firewood Jollof Rice:

1. To get that perfect red colour jollof rice, I usually use either of these tomato paste brands: DE RICA or GINO - in the ratio of 1 sachet to 3 cups of rice.

2. Also, to get that perfect red colour jollof rice, I usually use lots of Red bell peppers (Tatashey) and small portion of Long Chilli peppers (Shombo) in combo with Scotch bonnet/habanero peppers

3. Roasting your peppers gives your jollof a very nice smokey flavour!

4 I use aluminum foil paper with a tight/perfectly fitted pot lid to cover the rice while cooking. 

5. Personally, I prefer and recommend short grain rice for this.

6. I recommend using iron or aluminum pots (NOT non-stick pots!)

7. Using Chicken and Beef broth or Goat meat broth is highly essential

8. Parboil the rice by soaking it inside hot water for 15-20 minutes (do NOT cook-parboil)

Ingredients: Firewood Jollof Rice

1. Short grain rice

2. Vegetable Oil

3. Sliced onions

4. DE RICA/ GINO tomato paste 

5. Pepper Mix/Base – Blend roasted red bell pepper (tatashey), Scotch bonnet/habanero peppers (ata-rodo), Onions, Long chilli pepper (shombo), Garlic & Ginger 

6. Spices & Seasonings - Thyme, Curry, White pepper, chicken seasoning cubes, Salt and Bay leaves

7. Chicken & Beef/ Goat Meat broth – this is the water gotten from boiling the chicken or beef

8. Aluminum Foil Paper

9. Butter

Procedure - Firewood Jollof Rice

1. Firstly, roast the peppers in an oven/grill. Then blend

2. In a bowl, measure the rice. Proceed to add the hot boiling water in the bowl and leave to parboil (for 15-20 minutes). Rinse the rice thoroughly with salt once parboiled and set aside to drain.

3. On low heat, place the pot on the gas, add the vegetable oil (discretionally). Add the sliced onions and fry until fragrant (until the aroma of the onion comes out) while stirring. 

3. Add the tomato paste and fry till it looks separated (see image below – 1st collage, image 7).

4. Add the blended pepper mix and stir in together. Add the spices and seasonings (according to your taste bud) and stir fry for 10-15 minutes (stir continuously to avoid burning).

5. When the stew is well fried, add little out of the chicken/beef broth & water and stir. Add the drained parboiled rice. 

At this point, you need to taste if you need to add the remaining chicken broth or salt/seasoning cubes. Also, ensure that you do NOT add too much water/broth at this point; the water should be just a little above the rice (see image below – 2nd collage, image 4).

6. Once you are okay with the taste, roll out the foil paper to cover the rice and then place the lid on top. The gas should be on Medium-Low heat. Cook the rice for 40-45 minutes.

7. Open the pot now, the rice should be 100% soft by now. But wait! One more thing - little secret😉 

8. Add butter and stir into the rice. And cover the pot tightly using the foil paper. Then, increase the gas heat to the highest and leave the rice to burn for 10-12 minutes. 

Now, come back to open the pot and stir (by now, the whole neighborhood should be at your door requesting for their own share of the Firewood Jollof Rice🤣 cos the aroma is gonna be aromainggggg😛)

Voila! Here you have it, your firewood jollof rice! Serve yourself, and accompany with anything you want; moin-moin, salad, beef, chicken. Feel free!
